Forty-three papers were drawn from a workshop on Food Quality Science and Technology held in the Horticultural Research Institute (Lithuania) in June of 2001. The focus is on the preservation of fruits and vegetables, but other plant products (such as medicinal) are covered as well. Broad topics include computer-based control systems, assessment of harvest and postharvest conditions on processing qualities, biochemistry of fruit softening, the influence of storage conditions, quality evaluations, and other applications. Each chapter looks at a technology or technique related to specific plants.
